Tropea onion bottled into hotsauce, an ode to the Calabrian crown jewel. This is arguably the sweetest onion in the allium family; a meticulous cultivation that’s grasped the intersection between a shallot and classic red onion, boasting delicate, hollow greens that give a nod to the classic spring onion. The whole plant’s essence has been preserved in this bottle elevated by Thai basil, garlic and another of Calabrias celebrated produce, the Diavolicchio chilli.
You’ll be hit with the fresh bite of the tropea greens, punched with pungent garlic and zinged with spicy Diavolicchio, then gently hugged by the sweetness of whole tropea bulbs.
Perfect on anything you’d want to slather with hotsauce; let’s not over complicate it.
We have fallen in love with this plant and it’s seemingly all year round growing potential in our region, so this hotsauce may just have to be a spicy staple. But for now an ultra limited run of 15 is up for grabs.

Ingredients: whole tropea onions, red wine vinegar, naturally fermented white vinegar, brown sugar, diavolicchio chillies, garlic, salt, herbs & spices.
Storage: stable in a cool, dark pantry. Although if you notice any effervescence it indicates that fermentation has started back up, not a problem - simply store in the fridge. Our 'best before' dates are written underneath the jars.
